SHICHI HON YARI Junmai Daiginjo Shizuku
The Shizuku Junmai Daiginjo is developed with the Tamasakae rice variety polished down to 45%, a lengthy brewing process ensues and finally, the liquid sake is separated from the lees through the Shizuku method in which the sake drips from bags without any pressure being applied. The result is a very elegant and high quality brew. The aroma is reminiscent of a white wine, bright and fruity. On the palete it is rich and viscous with a relative acidity that makes it a likely companion to various flavours.
